Lazzat-E-Kanpur: This winters, get ready to relish ‘Makhan Malai’

Kanpur (Uttar Pradesh), Dec 11 (ANI): Uttar Pradesh reflects a glimpse of Indian culture. The food here reflects the diversity in its culture. The main attraction in Uttar Pradesh’s food is Kanpur’s famous sweet, ‘Makhan Malai’ which has earned the state a reputation in food culture. ‘Makhan Malai’ is as old as the British rule in India. In its heydays, Beni Madhav Gupta had innovated this relishing sweet dish. Today his son, Kaju Gupta has taken his legacy forward. The whole process is a rhythmic experience, which begins around 3pm with boiling milk in a huge sauce pan over a stove that runs on cow dung cakes. It is then mixed with selective ingredients at right temperature and once the mixture cools down completely it is filled in buckets and hung under the evening sky for six-eight hours. Fresh milk cream is added to the boiled milk and it is boiled again. The prepared dish not only exudes fresh aroma of saffron and cardamom and tastes buttery and creamy but this mouth watering dish also contains medicinal properties and has low calories, which proves to be a boon for health conscious people. It is known by many names like ‘Makhan Malai’, ‘Faag’, ‘Daulat ki Chaat’ and the ‘Bhog’ offered to Lord Krishna is also prepared by chefs from Kanpur. There is a huge demand for ‘Makhan Malai’ in marriage ceremonies. The dish is surely a must thing to eat for winters as its sweet and fresh taste rejuvenates every soul in cold season.
